Bushy variety. Fruits are cylindrical, up to 20-60 cm long, yellow colour. Grow best in fertile, manured with organic fertilizers, sunny soil. Courgette is a heat loving vegetable, therefore it is sown, when the soil in the depth of 10 cm warms up to +10+12 ºC. Fruits have a mild taste; good for diet nutrition, contain lots of vitamin C and minerals. Used fresh, can be fried, steamed, canned.

Zucchini. Bot.: Cucurbita pepo L. var. giraumonas.
Zucchini cutlets (Cretan recipe).
Ingredients:
1 kg zucchini
1/2 kg potatoes
2 onions
100 g grated feta cheese
100 g of any other grated cheese
2 eggs
2-3 tablespoons parsley
2 tablespoons mint
some flour
some crushed crackers
olive oil
salt, pepper.
If the zucchini on hand is too large or slightly overripe, you can lightly boil it.
To do this, remove both ends from each zucchini, grate the zucchini on a coarse grater, lightly salt it and let sit for about 1 hour.
Place the zucchini on a clean piece of cloth or gauze and allow the excess juice to drain. Then mix this zucchini mixture with the rest of the ingredients (potatoes, feta, cheese, breadcrumbs, eggs, salt and pepper).
Place the mixture in the refrigerator for 20 minutes in a sealed container. Then you can form round balls from the thickened mixture, obtaining small cutlets by pressing with your palm.
Then roll them in flour and fry them in hot olive oil until brown and crusty.
These cutlets are best served as an appetizer.
